water melon, Ginger and Grapfruit salad.

This pretty,pink combination is very light and refreshing for any summer meal.
  (SERVE 4)
                   INGREDIENTS:-
                                              !) 1b/2cups diced watermelon flesh.
                                              2)2 ruby pink or pinks grapfruit.
                                              3)2 pieces stem ginger in syprup.
                   Cook's Tips:  Toos the fruit gently, grapfruit sigments will breakup and the
                                         appearance of the dish will be spoiled.
                                         1) Remove any seeds from the watermelon and cut into ;bite sized chunks.
                                         2)Using a small sharp knife cut away all the peel and white pith from the
                                           grapfruits and carefully lift out the segments,catching any juice in a bowl.
                                         3)Finely chope the ginger and place in a serving bowl with the melon cubes
                                           and grapfruit segments,adding the reserved juice.
                                         4)Spoon over the ginger syrup and toss the fruit lightly to mix evenly.
                                           Chill before serving
