Marinating the salmon allows all the flavors to develop,and the lime tenderizes the fish beautifully,so it needs

INGREDIENTS:
4 Salmon steaks about 8 oz each
4 whole star anise
2 stalks lemongrass, sliced
juice of 3 limes
Zest of 3 limes,finely grated
2 table spoon hony
2 tbsp grapseeds oil.
Salt and freshly ground black papper
lime wadges to garnish..
Cook's Tips: Always off any marinade from meat,fish or vegetables to ensure that the hot oil
doesnot splutter when you add them to the wok.
!) Remove the middle bone from each steak,using a very sharp filleting knife,
to make two strips from each steak.
2) Remove the skine by inserting the knife at the thin end of each pieace of
salmon.Sprinkle1 tsp salt on the cutting board to prevent the fish slipping while
you remove the skin. slice into pieces using diagonal cuts.
3) Coarsely crush the star anise in a mortor and pestle.Marinate the salmon in a
non metallic dish, while the star anise, lemon grass, lime juice,and zest of and
honey; season well with salt and pepper ,cover and chill overnight.
4)Carefully drain the salmon from the marinade,put dry on the paper towels and
reserve the marinade.
5)Heat the wok,then add the oil, when the oil is hot add the salmon and stirfry ,
stirring constantly until cooked ,increas the heat,pour over the marinade and
bring to a boil, Garnish with lime wadges and serve.
