Cream

A butter pecan ice cream recipe sounds like it would be difficult. How do you infuse that addicting butter taste throughout the ice cream without making the butter taste too strong? And just how do you make this ice cream the right balance of salty and sweet?
Although this ice cream recipe may appear to be difficult, it's not that hard at all!
With the right ingredients and a little direction, you can be churning out your own delicious homemade ice cream.
So let's begin! First, you'll need to make sure you have all the ingredients.
What You'll Need
2 large eggs
2/3 cup brown sugar
1 cup lowfat milk
1/2 cup butter
1 cup chopped pecans
2 cups heavy whipping cream
1 tsp vanilla extract
What You'll Need to Do
Step One: Whisk eggs until they are light and fluffy. This will take somewhere between 1 - 2 minutes.
Step Two: Gradually, stir in brown sugar. Once all the brown sugar has been added, whisk the mixture for 1 minute.
Step Three: In a saucepan, heat the milk until the milk just begins to boil.
Step Four: Pour the hot milk into the beaten egg mixture. Stir together well.
Step Five: Pour the hot mixture back into the saucepan and heat the mixture over low heat, but do not allow it to boil. Stir constantly until the liquid begins to stick to the back of your spoon and has thickened.
Step Six: Chill this mixture for at least 2 hours in the refrigerator.
Step Seven: While the mixture is cooling, melt butter in a saucepan over low heat. Add the chopped pecans, stirring frequently until the pecans start to turn brown. Cool pecans and butter completely.
Step Eight: Remove chilled milk mixture from the fridge and stir in heavy whipping cream, vanilla extract and cooled melted butter.
Step Nine: Pour mixture into your ice cream maker and let it churn for 15 - 20 minutes or according to the manufacturer's instructions.
Step Ten: Add cooled pecans to the ice cream maker and continue to churn for 5 more minutes.
Last and best of all, taste your butter pecan ice cream and enjoy your treat!
