Easy Recipe to Turn Homemade Cake Mix Into Delicious Pudding Cake

Cake mixes are an easy and convenient way to make a banana cake recipe at home when you do not have much time to prepare everything from scratch. You can easily turn cake mixes into interesting desserts by adding your favorite ingredients. Given below is a simple banana pudding cake recipe using homemade cake mix and white glaze.
What you will need:
For the cake:
- Yellow cake mix - 1 box (typically 18.25oz, recipe given below)
- Instant pudding mix - 1 box (3.5oz)
- Peeled and mashed bananas - 3/4 cup
- Eggs - 4
- Vegetable oil - 1/4 cup
- Water - 1 cup
For the glaze:
- Milk - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Confectioner's sugar - 2 cups
To prepare:
- Preheat the oven to 350F.
- Grease and flour a 9-inch cake tin. You can also use a 10-inch Bundt pan for this cake.
- In a large bowl, mix the cake mix and pudding mix.
- Create a well in the center of the mix and break the eggs into it.
- Beat the mix and eggs together at maximum speed for about 4 minutes till they are well mixed.
- Add the mashed bananas, vegetable oil and water to the mix and beat again for 2-3 minutes at minimum speed till all the ingredients are well blended.
- Pour the prepared batter in the greased pan and shake the pan slightly to remove any air bubbles.
- Bake in the preheated oven for 40-45 minutes. Check by inserting a toothpick in the center of the cake; if it comes out clean the cake is done.
- Let it cool in the pan for 10-15 minutes.
- Remove from the pan and cool on a wire rack.
To prepare the glaze:
- In a bowl, take the milk, sugar and vanilla extract and whisk well to combine and get a dropping consistency.
- Drizzle the glaze on the cake and decorate with chopped walnuts.
- Let it cool before serving.
To prepare the homemade cake mix you will need:
- Flour - 7 1/2 cups
- Salt - 1 tablespoon
- Sugar - 4 1/2 cups
- Baking powder - 2 tablespoons
- Cold butter - 3/4 cup
Method:
- In a large bowl, mix 5 1/2 cups of flour with salt, sugar and baking powder.
- In a separate bowl, take the remaining flour and add cubes of butter to it.
- Whisk this mix in a food processor until fine.
- Add this to the dry flour mix and whisk together well.
- Divide the mix in three equal parts and store each part in a separate airtight or zip lock bag or a glass jar.
- Take care that no wet utensils come in contact with the mix.
- The mix can be stored in the freezer for 3 months or you can store it in the pantry for about a month.
