Just like with fish, I have to get a bit creative when I am serving crab to my grandsons. With this recipe they just look like little burgers and they gobble them down. But it's not that hard to get them to like them because they are just delicious. The outside of the cakes are crispy and crunchy and the lemon-mustard sauce makes them irresistible.
I usually serve them with some homemade sweet potato fries, coleslaw and fresh fruit. They are also wonderful with potato or macaroni salads, chips and baked beans. For just myself, my husband and two small grandsons this recipe is the perfect size. If you love crab, you will love these little sliders.
What you will need:
MINI CRAB CAKES
- 1 lb. lump crabmeat, picked and cleaned
- 2 eggs
- 1/3 cup light mayonnaise
- 1/3 cup finely chopped green onion
- 1 tbsp. Spicy Whole Grain Mustard
- 1 cup seasoned breadcrumbs
- 2 tbsp. butter, divided

LEMON-MUSTARD SAUCE
- 3 tbsp. light mayonnaise
- 1 tbsp. Spicy Whole Grain Mustard
- 1 tbsp. fresh lemon juice
- 1 tsp. fresh lemon zest
- 6 small slider buns or buns, split
- 1 tbsp. Spicy Whole Grain Mustard
- 1 tbsp. fresh lemon juice
- 1 tsp. fresh lemon zest

The first thing to do is to preheat your oven to 350 degrees. Next in a large bowl combine the crabmeat, eggs, mayonnaise, green onions, mustard, breadcrumbs and slat and pepper to taste. Form into 6 small patties.
Heat the butter in a large nonstick skillet over a medium-high heat. Add the patties; cook until golden brown on both sides. Transfer the patties to a baking sheet. Place the baking sheet of patties in the oven and bake for about 10 minutes or until they are heated through. While the patties are in the oven, for the sauce, in a small bowl combine the mayonnaise, mustard, lemon juice, lemon zest and slat and pepper to taste.
To serve, place 1 crab cake on the bottom half of a slider bun, and top with the lemon-mustard sauce. Add your favorite topping; lettuce, tomato etc. to the sliders and they are ready! The total preparation time is about 10 minutes and the total cooking time is approximately 15 minutes. These little crab sliders are delicious, hope you give them a try, you will love them!
